Texture and crunch were the highlights of the summer rolls ($4.95). A translucent white rice paper held each roll together, giving us a window to the crunchy cucumber, shrimp and lettuce. We are a small family restaurant with big love for noodles! We love the taste, the simplicity, and the comfort and warmth they bring. We hope that our guests would feel the same when they spend time with us in our little noodle house. The special combination noodle bowl ($12.95) was listed as one of the house specialties.

Warm vermicelli, or rice noodles as thin as angel hair pasta, is at the base of the bowl and topped with grilled pork, shrimp and vegetables. There was a tremendous amount of crunch in the bowl from the lettuce, bean sprouts, onions, crispy fried pork and perfectly-cooked shrimp. Mint, scallions, picked vegetables and peanuts permeated each forkful.
Cilantro, onion and basil complemented the beef flavors of the broth, which had a deep umami flavor and just the right amount of salt. Flat rice noodles, layered into a white stack, sunk to the bottom of the bowl. They were cooked nicely, offering a little resistance when bitten. It was garnished with a crunchy fried egg roll, which was flavorful and not greasy, as can sometimes happen. A side of homemade fish sauce added additional umami.
We travel between Thousald Islands and Buffalo often and stop here for dinner 99% of the time for the past couple years. The food is top notch and the staff is always kind, happy, and generous. We ordered the spicy beef noodle soup (bún bò Huế) and the creamy udon noodle soup, both were really good. I have also come here before with my sister and her wife, who are both vegans, and they appreciated the options they had here.

Our order of eight steamed pork dumplings burst with fresh pork flavor. What impressed us most was the texture when they arrived. Bad restaurant dumplings are often overcooked or overstuffed. The pork stuffing held together nicely and didn’t crumble when bitten or split with a fork. The wrappers were cooked just right without getting mushy or sticky to the touch. A sweetened soy sauce on the side was a nice addition, but the dumplings stood up on their own.
